  • 2 1/4 cup of plain flour
  • 1/2 cup of brown sugar
  • 1/2 cup of sugar
  • 1 cup of margarine (room temperature)
  • 1/4 cup of soy milk
  • 12 oz of chocolate chips (dairy free, of course)
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking soda

How to make:

  1. Take a bowl with flour, add salt and baking soda to it and mix everything together.
  2. Take your softened margarine and mix it with the help of your hand mixer or KitchenAid to fluff it up a little bit.
  3. Add brown and white sugar to it and continue mixing till it reaches creamy consistency.
  4. Pour milk and vanilla into that mixture and blend them together.
  5. Combine that mixture with dry ingredients (you may use either a spoon or your mixer to do that).
  6. Once the dough is smooth and even, add chocolate chips to it. Make sure that they’re evenly spread throughout the dough.
  7. Preheat your oven to 350F, line your baking tray with paper and grease it with a little bit of oil.
  8. Prepare small chocolate chip cookie balls (golf ball size or a little bit bigger), pop them onto the tray and shove it into the oven.
  9. Bake for 7-10 minutes and serve when they’re still a little bit warm. Yummm!!!

2. Healthy breakfast mix vegan cookies

Ingredients:

  • 1 1/2 cup of almond flour
  • 1 cup of oat flour (gluten-free option)
  • 1 orange (juice and zest)
  • 1/2 cup of melted coconut oil
  • 1/2 cup of maple syrup
  • 1 1/4 cup of shredded carrots
  • 1/2 cup of raisins
  • ½ cup of walnuts (chopped)
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of ginger
  • 1 tablespoon of cinnamon
  • 1 teaspoon of cloves
  • 1 teaspoon of vanilla extract

How to make:

  1. Grab a large bowl and mix all dry ingredients (except of raisins, walnuts and carrots) together.
  2. Take another bowl and mix all vet ingredients (including freshly squeezed orange juice and zest).
  3. Combine wet and dry ingredients and make sure that the final mixture is all blended together.
  4. Add your fillings (raisings, walnuts and shredded carrots) into the cookie dough. Fold them into the dough using a wooden spoon to spread them evenly throughout the dough.
  5. Use a table spoon or ice cream/cookie scoop to form your cookies soon-to-be. Just spoon the mixture and blob it onto the lined and greased tray leaving about 2’’ between cookies.
  6. Place the tray into preheated to 375F oven and bake them for 10-12 minutes till your cookies. You’ll see that they’re ready once they turn golden brown.
  7. Cool your cookies down and eat them with a nice glass of soy milk or a cup of green tea. Delish!!!

3. Bonus cookie hack: lazy vegan mints

This is one of the quickest and easiest vegan cookie recipes that features only 3 ingredients and tastes like heaven.

DIY Oreo variation, favorite cookies improved by additional layer of chocolate and crisp minty hint. No baking required!

Ingredients:

  • Oreos (16-20 regular size traditional cookies)
  • 7-10 oz of dark dairy free chocolate
  • 1 teaspoon of mint extract

How to make:

  1. Separate Oreo cookies in half and remove white filling. You might not like the feeling of doing that, but I promise you that final product is worth your original Oreo love.
  2. Break the chocolate bar into small pieces and melt them (in the microwave or in a pot on the stove).
